What are Pappadums?

Pappadums are an important part of Indian cuisine; recipes vary from region to region and family to family. They are typically made from flour or paste derived from lentils, chickpeas, black gram (urad flour), rice, or potato.

This flat bread can be unseasoned (as preferred in southern India) or variously flavored with red or Black pepper, garlic or other seasonings, as in Northern India. Pappadums are available in various sizes and flavors.

How Pappadum is Prepared?

Pappadums can be prepared from different ingredients using diffrent methods. Arguably the most popular recipe uses urad dhal or black gram. Black gram flour is mixed with salt, rising agent and water mixture. This is kneaded together in case of unseasoned Pappadums and with spices like pepper, chilly, garlic etc.. in case of seasoned Pappadums.

Tamilnadu Food

A well kneaded mixture is rolled to thinner sausages, pelletted and flattened to thin round discs. These are authentically sun-dried and stored for consumption. Pappadums may also contain rice flour, vegetable oil etc. as other ingredients. To achieve different tastes, cracked black pepper, red chilly powder, asafoetida, cumin seeds are used. Certain Spices are not used for specific foreign customers to meet their legislation.

What are the Other Names of Pappadums?

Papad, also known as papad in Northern India, pappadam in Malayalam, happala in Kannada, appalam in Tamil, Papad in Sinhala, appadum in Telugu, pappadum or poppadom in the UK. Alternative names for papadum are papar, pappad, papparde, pappadom, pappadum, popadam, pompadum, poppadam, poppadom, appadum, appalum, appala, appoll, papari, pamporo, puppodum, pampad, happala, and popper.



How are Pappadums cooked?

Deep Fry - Heat oil in a large deep pan or wok (200 C). To test oil, gently drop a piece of Pappadum in the oil, if it rises to the surface instantly then the oil is hot enough. Alternatively temprate probe thermometer can be used to measure the temprature which shoud around 200 C. Gently drop Pappadum one at a time, holding under the oil with tongs. Take out the Pappadum within 3 seconds (Pappadum turns an even golden crips). Place the Pappadum upright on a serviette to drain excess of oil and serve.

Grill/BBQ - Place under a hot grill. Cook until the Pappadum turns an even golden crisp.

Microwave - Lighty brush one side \ both sides of the Pappadum with Cooking oil. Place them in microwave using proper appropriate container for approximately 60-90 seconds.

Open Flame - Roast them on a low flame. One at a time over a gas flame, using tongs and turning frequently, until they are crisp.
